Nilagang Baka is a delightful beef stew cooked with petsay, cabbages, and different vegetables. It is one of the most familiar foods that can found in each part of the Philippines.

From the name itself, Nilaga meaning fermented, Baka means beef in English; it needs several hours to prepare this meal.

The method of boiling gives the meat soft and tender.

Try this delicious and nutritious beef soup, Nilagang Baka Recipe.

Nilagang Baka Ingredients:

  • 1-kilo beef shank
  • Eight potatoes cut the same size as the beef
  • One bundle Pechay (Bok choy) cut into two pieces
  • One small cabbage, quartered
  • Five onions diced
  • Four tablespoons of patis (fish sauce)
  • Ten grains of black pepper
  • 1-liter water
  • Salt and pepper

Nilagang Baka Dish Instructions:

  1. In a large casserole, put beef and splash in the water, the water should level just over the meat.
  2. Begin to boil and let it simmer for ten mins then discard scum or dust on top during simmering.
  3. Put onions, cover, and simmer for 1 to 1 and 1/2 hrs or until beef is soft, if managing a pressure cooker, it will only take 30 mins.
  4. Add sufficient water, beef cube and potatoes, proceed simmer until potatoes were cooked.
  5. Add the peppercorn, ground pepper, and fish sauce.
  6. Add the cabbage then the pechay, cover it then simmer for two mins. Do not over cook the vegetables.
  7. Salt and pepper to taste.
  8. Serve to steam hot in a bowl and plain white rice.
